ビルバオ…この街は素晴らしい街です。調和があります。人にやさしく、古いもの、伝統を大事にし、かつ先進的なものも受け入れる。その比がすごい。その代表的なものそれが、グッゲンハイム美術館です。その外観に圧倒します。中は…実はまだ入ってないのです。そこのレストランに行ったのです。そこは… スペイン屈指のミシュラン三ツ星レストラン、マルティン・ベラサテギに見いだされた、ホセアン・マルティネスが伝統的かつ斬新な表現の新スペイン料理を披露しています。これも目的のひとつでした。早めにいって予約しないと食べれません。そこで食べた料理は！ … …すごいです！素晴らしい！やはりスペイン料理はスペイン料理です！　他の料理とは違います。姿形は斬新ですが、味はやさしく、かつ素材の味はしっかり引き出されていれる… ん？　これは…　日本料理に…んん！　京都で食べた懐石に近いものがあるぞ… その料理に圧倒され、次の日の予約も入れてしまいました！！
